Buffalo Cauliflower

Ingredients

Cauliflower Wings

  • 1 small head cauliflower (if using a large head, you may need to up the batter and sauce quantities)
  • 1/2 cup all purpose gluten free flour*
  • 1/2 cup unsweetened almond milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup crispy gluten free bread crumbs (seasoned with salt and pepper) OR toast your breadcrumbs slightly before using

Sauce

  • 1/2 cup vinegar based hot sauce (such as Franks hot sauce)
  • 1 tablespoon vegan butter
  • 1 teaspoon garlic powder
  • 2-3 tablespoons maple syrup

Cauliflower wings

  • Preheat oven to 450 degrees.
  • Prepare a baking sheet by lining it with a silicone baking sheet or greased foil.
  • Using a knife, remove florets from the cauliflower (aka cut off the leaves and don't use the stems).
  • Chop the cauliflower into smaller pieces to resemble the size of wings.
  • In a separate bowl, whisk the gluten free flour, almond milk, salt, ground black pepper and garlic powder in a bowl to make the batter.
  • In a separate bowl, place the bread crumbs. Line it up beside the batter bowl.
  • Toss the cauliflower in the batter mixture one at a time, shaking off excess batter. Do not soak. Then, dip the cauliflower into the breadcrumbs to coat completely, then place onto the baking sheet. Repeat until all of the wings are coated.
  • Bake for 22 minutes. Please ensure your oven is completely preheated and hot.
  • While baking, prepare the ingredients for the sauce by whisking together.
  • Remove from oven. Toss the wings in the sauce then using tongs, remove and place back on the baking sheet. Bake for another 5 minutes for the sauce to soak into the wings.
  • Remove from oven and serve immediately with a cool vegan ranch dressing (cooling agent is essential!). Enjoy!

Sauce

  • While the wings are baking, in a small pot over high heat, mix all the sauce ingredients. Bring to a boil and boil for 2 to 3 minutes, which helps to bring out more flavour notes of the ingredients. Remove from heat. Taste a little bit to decide if you need more sweetener to balance out the heat; if so, add a tablespoon at a time until your desired heat. Please note that especially depending on the hot sauce you use, these wings are HOT so take caution!

My Favorite Fruit Salad

Ingredients:

1 pt. container strawberries
1 pt. container blueberries
1 bunch (about 1 1/2 lbs.) seedless grapes (green, red or a mixture of both)
1/4 cup honey
juice from 2 limes (about 2-3 tablespoons)


Instructions:

  1. Rinse strawberries, blueberries and grapes.
  2. Gently pat dry the fruit. Hull strawberries, then cut each in half; if large, cut into quarters.
  3. Remove stems from blueberries, if any.
  4. Remove grapes from stems.
  5. Gently combine all three in a large bowl or aluminum tray. Set aside.
  6. In a small bowl, whisk together honey and lime juice. Pour over fruit.
  7. Refrigerate until ready to serve

Skinny Bell Pepper Nachos

Ingredients:

  • 1 pound lean ground turkey
  • 1 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon kosher or sea salt
  • 3/4 cup salsa, no sugar added
  • 1 cup grated cheddar cheese, reduced-fat
  • 3 bell peppers


Instructions:

  1. Remove seeds, core, and membrane from bell peppers then slice each one into 6 vertical pieces where they dip down. Set sliced bell peppers aside.
  2. Cook ground turkey over medium-high heat, breaking up as it cooks. Cook until the turkey loses it's pink color and is cooked through. Drain off any fat.
  3. Preheat oven to 375 degrees.
  4. Combine cooked turkey with spices and salsa. Evenly distribute mixture into the bell pepper boats, top with cheese.
  5. Bake on a parchment lined baking sheet for 10 minutes or until cheese is melted and peppers are hot. Optional ingredients: sliced Jalepeno peppers, diced avocado, fat-free Greek yogurt or sour cream, or sliced green onions.
  6. NOTE: If you prefer much softer bell peppers, add a few tablespoons water to the bottom of a large casserole dish, add filled nachos, cover tightly with foil and bake 15 minutes.

Bacon Bourbon Meatballs

Ingredients: 

  • 6 bacon strips
  • 1/2 medium yellow onion
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 2 tablespoons fresh chopped parsley
  • 1 large egg
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 cup barbecue sauce
  • 1/2 cup water
  • 3 tablespoons bourbon

Instructions: 

  • Place the uncooked bacon into a food processor (affiliate link) and process for about 1 minute or until bacon is finely ground up. Add in the onion and process until onion is finely chopped and mixed in.
  • Spoon bacon and onion mixture into large bowl. Add ground beef, breadcrumbs, parsley, egg, chili powder, and salt. Stir to combine.
  • Scoop out the meat mixture and roll into balls using your palms, should make about 24 1 inch meatballs.
  • Heat oil in large saucepan over medium heat. Place the meatballs into the sauce pan and cook, turning every couple minutes to ensure all sides cook evenly. Cook for about 8-10 minutes until fully cooked.
  • Remove the meatballs and set aside. Remove the pan from the heat and pour out the excess grease.
  • Add the barbecue sauce, water and bourbon to the saucepan and return to heat. Stir to mix the sauce together. Add in the meatballs and allow them to simmer in the sauce for at least 10 minutes.

Buttermilk Bread

Ingredients: 

  • 1/3 cup water
  • 1 cup buttermilk
  • 2 tablespoons butter, melted
  • 1 1/2 tsp. salt
  • 4 tbl brown sugar
  • 3 cups flour
  • 2 1/4 tsp yeast


Instructions: 

1. Put all ingredients in your bread machine in the order above. 

2. Once cycle is finished, punch down the dough and place it in a greased loaf pan.    

3. Cover and let rise until it has doubled in size. 

4. Bake at 350 for 30 minutes or until lightly brown on top. 

5. Take out of the oven and immediately rub a cold stick of butter over the top. 

6. Let cool and remove from pan.
